Fifty years ago, GlenAllachie Master Distiller, Billy Walker, began his whisky journey as a blender. he joined a team creating Iconic Blended Scotch Whiskies to be enjoyed across the globe.

In 2021, Billy honored his roots in the industry with the relaunch of White Heather blended scotch whisky, and is now proudly showcasing his latest creation; a limited release fifteen year old.

Capitalising on his half century of experience, he has sourced the finest Single Malt and grain whiskies from across the Highlands, Islay, and Speyside to craft a recipe with a particularly high Single Malt content.

Using a combination of premium American and Spanish Oak casks, the blend was laid to rest for an additional 3 years for the flavors to marry and the wood to impart additional depth and complexity.

White Heather 15 yr

White Heather 15-year-old delivers exceptional balance between honeyed sweetness and subtle peat smoke. Undertaking a complex dual maturation system in American and Spanish Oak, experienced Master Blender Billy Walker frequently monitored the spirit development to ensure optimal flavor experience was achieved.

47% Malt Whisky (20% from Speyside, 23% from North Highland, 4% from Islay)
53% Grian Whisky

Matured for 12 years in a combination of Sherry Butts, 1st Fill American Barrels, and 2nd fill Barrels & Hogsheads.

Married together, then laid down in PX Puncheons, Oloroso Puncheons, and American Virgin Oak (Medium Toast, Medium Char)

 

Color: Golden Bronze.

Nose: Waves of heather honey and butterscotch, followed by orange peel, pineapple, mint, and a hint of peat.

Taste: Layers of treacle, heather honey, and butterscotch, followed by orange peel, grapefrui,t and almonds; with mocha, ginger, and a light wisp of peaty smoke on the finish.

White Heather 21 yr

White Heather 21 yr is primarily matured for 18 years in a combination of 1st fill American Oak Barrels, 2nd fill barrels and hogsheads, and Sherry butts, the blend is laid to rest for an additional 3 years in PX Puncheons, Oloroso Puncheons, and Appalachian Oak (medium toast/char) for the flavors to marry and the wood to impart additional depth and complexity.

The slumbering casks are kept under the watchful eye of billy until his discerning standards are met and the perfect balance of wood and spirit character is achieved.

Presented at 48% ABV, non chill filtered, no color added

47% malt whisky, 53% grain whisky

Color: Natural Gold-Bronze.

Nose: Beautifully soft background with heather honey, butterscotch, peat reek and hints of tannins.

Taste: Rich notes of heather honey, butterscotch, orange peel and soft tannins, with a wonderful presence of peat and smoke.
