Historias y Memorias is an artisanal Mezcal made in San Matatlán, Oaxaca, Mexico by Maestro Mezcalero Jose Luis Hernández.
The agave is crushed by horse drawn tahona and then fermented using natural yeast for 5-8 days in open wooden vats. The fermented agave is then distilled twice in copper stills.
The Historias y Memorias Alebrije is comprised of four different creatures:
The Bat – Representing fertilization & sustainability of the agave.
The Jaguar – Symbolic of the rain gods providing life & strength to cultivation.
The Serpent – Representing heritage & terroir for both the earth & soil.
and the Iguana – Honoring local tradition & education within a sharing community.
Palate: Creamy and balanced. Citrus with a touch of clay and tropical fruit followed by peppermint. The acidity and minerality are present and welcome in the balance of this elegant agave distillate.
Finish: Here the citrus carries out a long dance with the light smoke and clay, creating an enjoyable end to a wonderful experience.
